Originally from Burgundy, chef Nicolas Martin had the honor of being able to work in the largest establishments in the region – Jérôme Raymond, Lameloise, Maison Troisgros, Jérôme Brochot, where he acquired a taste for the demands and rigor of gastronomy while by developing a desire for creation and independence. Today it is a privilege to be able to express oneself fully in this region where the terroir and the diversity of products are so rich.
